Research Interests:
Dr. Kobayashi’s current research focuses on health benefits of spicebush and American persimmon teas in the area of mineral and phytochemical content analyses, estimation of antioxidant capacity as well as understanding mechanism of their anticancer properties. He is investigating the role of genotypic differences and environmental factors affecting production of phytochemical constituents found in spicebush and American persimmon. One particular approach he is applying is the comparison of American flora and East Asian flora to identify possible candidates for screening medicinal or health-beneficial properties. In addition to medicinal plants, he is also interested in production of Japanese vegetable and other specialty and niche crops for Kentucky’s limited resource farmers. |
